It's asparagus season again at the Zunfthaus zur Waag!

Spring brings one of the most delicious times of the year to our house: asparagus season. Find out more about where our asparagus comes from and about our current dishes.

This year, too, we are serving particularly tender asparagus from Baden, grown by Caspar Ruetz, the self-proclaimed «Asparagus King». Thanks to the mild climate and sandy soils of the Rhine valley in Baden, the asparagus from the so-called Asparagus Route develops a particularly fine aroma and a melt-in-the-mouth texture. Every spear is cut by hand – painstaking work that preserves its high quality.

Our current menu features numerous dishes that showcase the variety of Baden asparagus in delicious ways. As a starter, we serve a creamy asparagus soup with strips of smoked salmon or a fresh spinach salad with asparagus, strawberries and coppa. In the starring role are roast salmon with white asparagus, hollandaise sauce and sautéed potatoes, tender pork fillet wrapped in bacon with green asparagus, honey mustard sauce and rosemary potatoes, or our homemade wild garlic gnocchi with green and white asparagus – a fine vegan alternative.

A selected white wine from our wine list makes the perfect accompaniment. We particularly recommend a Zürcher Räuschling, for example, whose fresh acidity and minerality pair wonderfully with asparagus dishes.

Enjoy asparagus season in the historic ambience of the Zunfthaus zur Waag and let yourself be tempted by our current creations. We look forward to your visit!
