It's asparagus time again at the Zunfthaus zur Waag!
Spring marks the start of one of the most enjoyable times of the year for us: asparagus season. Find out more about the origin of our asparagus and our current dishes.
This year, we are once again serving you particularly tender Baden asparagus from Caspar Ruetz, the self-proclaimed "Asparagus King". Thanks to the mild climate and sandy soils in the Rhine Valley in Baden, the asparagus from the so-called asparagus route develop a particularly fine aroma and a melt-in-the-mouth texture. The spears are all picked individually by hand - a laborious process that preserves their high quality.
Our current menu includes numerous dishes that showcase the diversity of Baden asparagus in a delicious way. As a starter, we serve a creamy asparagus soup with smoked salmon strips or a fresh spinach salad with asparagus, strawberries and coppa. The main course features roasted salmon with white asparagus, hollandaise sauce and roast potatoes, tender pork fillet wrapped in bacon with green asparagus, honey mustard sauce and rosemary potatoes or our homemade wild garlic gnocchi with green and white asparagus - a delicious vegan alternative.
A selected white wine from our wine list provides the perfect accompaniment. We particularly recommend a Zürcher Räuschling, for example, which harmonizes perfectly with asparagus dishes thanks to its fresh acidity and minerality.
